DEFINITION

Maltose is a reducing disaccharide composed of two glucose molecules linked by an α(1→4) glycosidic bond. It contains one molecule of water of hydration or is anhydrous. It contains NLT 92.0% and NMT 102.0% of maltose (C12H22O11), calculated on the anhydrous basis. It may also contain other sugars.
