DESCRIPTION
Avocado Oil is obtained from avocado fruit (Persea americana Mill.). The fruit consists of an exocarp or rind, a fleshy mesocarp, a thin fleshy endocarp (collectively the flesh or pulp), and the stone. Crude Avocado Oil production may involve peeling and de-stoning freshly harvested fruit prior to extraction or may proceed with complete maceration without prior separation. A number of approaches, such as cold pressing avocado flesh, heat and enzyme-assisted release, and solvent extraction of oven dried ground fruit, are used commercially. Crude Avocado Oil undergoes bleaching, winterization, and deodorization to produce refined avocado oil. Avocado Oil has a clear appearance with light yellow color and a bland flavor and odor. This FCC Avocado Oil identity standard refers to the refined avocado oil.
