DESCRIPTION
White Pepper is obtained from the fully dried ripe berries of Piper nigrum L. (Family Piperaceae) after removing the pericarp. Whole White Pepper has a globular shape with a smooth surface, slightly flattened at one pole and a small protuberance at the other. The whole berries have matte gray to brown to pale ivory white color and may be processed by drying or dehydrating, decorticating, grading, crushing, and/or grinding to obtain the products of commerce. White Pepper has a slightly sharp and very aromatic odor, free from mold and rancidity. This FCC identity standard is applicable to White Pepper as the whole dried fruit and as the ground dried fruit (powder).
