Identity Standard Introduction

An FCC Identity Standard is an informational document designed to assist users in determining the identity or authenticity of a food ingredient or agricultural product for which a full monograph does not exist in the FCC. The FCC Identity Standard includes some of the same information that would be found in an FCC monograph, which may include synonyms, chemical formation, chemical formulas, chemical structures, production information, solubility details, packaging and storage instructions, and intended functions in food manufacture/processing. The FCC Identity Standard also notably includes multiple test methods and specifications under the header of Identification, similar to most FCC monographs. In the case of FCC Identity Standards, however, more test methods may be necessary to authenticate an ingredient, and wider specifications ranges may be included to account for variability in those types of food ingredients. Public data may be used, in part or in whole, to develop such specifications. FCC Identity Standards may include a section entitled Additional Considerations to convey additional information about ingredients which is not directly related to the identity of the item, but which may be of interest to users. Types of tests that may appear in this section may include methods for determining the types of processing procedures an ingredient has undergone, methods for detecting process contaminants or impurities of interest in some applications, and methods that may detect the presence or absence of compounds known to occur in the ingredient but which are not indicative of its identity (for example). Requirements for identification of the ingredient are not included in Additional Considerations, nor are any required limits or specifications. FCC Identity Standards are not included within the Monographs section of the FCC and differ from FCC monographs in various ways. FCC Identity Standards are appropriate for use solely to assist users in identifying a complex food ingredient or agricultural product for which an FCC Identity Standard already exists. When an FCC monograph is developed to address the same ingredient for which an FCC Identity Standard already exists, the monograph will replace the FCC Identity Standard, and the FCC Identity Standard will be removed from the compendia.
