DESCRIPTION
Allulose is a C-3 epimer of d-fructose. It occurs as a hygroscopic white, crystalline powder. Allulose is manufactured via enzymatic conversion of fructose, followed by processes which may include chromatographic separation, decolorizing, desalting, concentration, crystallization, and drying to obtain the crystalline powder. Allulose is soluble in water and slightly soluble in ethanol.
