Description
Mycoprotein is the cellular mass at approximate 25% (w/w) total solids obtained from the filamentous fungus Fusarium venenatum that occurs as a paste substance. The predominant component of the cellular mass derived from F. venenatum is protein. The cellular mass is manufactured under controlled, continuous, pure culture fermentation conditions under which mycotoxins are not produced. At the end of the fermentation process, the fermentation product is rapidly heated to devitalize the organism and reduce the content of ribonucleic acid (RNA). The paste-like mycoprotein is cleaned and isolated by centrifugation of fermentation slurry. Mycoprotein is practically insoluble or insoluble in water.
