DESCRIPTION
l-Theanine occurs as a white, odorless, crystalline powder, with a slight sweet taste. l-Theanine is produced by enzymatic synthesis from l-glutamine and ethylamine, using glutaminase derived from either Pseudomonas nitroreducens or Bacillus amyloliquefaciens. The microorganisms are cultured, immobilized in a gel, and placed into reaction columns where the substrate and environmental conditions are controlled. The resultant mixture is cooled, purified, concentrated, and dried into the final product. It is soluble in water and forms a transparent, colorless solution. It is insoluble in ethanol.
