DESCRIPTION
Gluconic Acid occurs as an aqueous solution of gluconic acid with minor amounts of lactone (glucono-δ-lactone, GdL), the inner cyclic ester. GdL, a related food ingredient, is the dry form of gluconic acid obtained by removal of water during crystallization. Gluconic acid is a colorless to light yellow, clear syrupy liquid. Gluconic acid exhibits approximately pH 1.8 and it melts with decomposition at 196°–202°.
