DESCRIPTION

Ethyl Maltol occurs as a white, crystalline powder having a cotton-candy odor and a sweet, fruitlike flavor in dilute solution. One g dissolves in about 55 mL of water, 10 mL of alcohol, 17 mL of propylene glycol, and 5 mL of chloroform. It melts at about 90°.
