DESCRIPTION

Yeast Extract occurs as a liquid, paste, or dried product. It comprises the water-soluble extract of edible yeast cells, the composition of which is primarily nitrogenous compounds, such as peptides and amino acids, accompanied by other yeast metabolites and salt. Yeast Extract is produced through an autolysis process in which the enzymes naturally present in the yeast and/or added food-grade enzymes break down the yeast cells. Food-grade salts may be added during processing.
